Feed Your Wanderlust

We’re excited to host the experts from Curio Spice Co. as they lead us on this introduction to the exciting world of spices and blending. The folks from Curio will take you through tasting exercises that illustrate how to assess and understand their individual flavors and characteristics. They'll introduce you to Curio’s Spice Flavor Wheel for identifying flavors and using them to compose spice blends, and guide you through different spice techniques that create nuance and depth of flavor, like blooming, grinding, and even when to add spices to a dish.  To put these spice lessons into delicious action, you’ll make seasonal dishes with us — each will feature flavor profiles from different parts of the world. You’ll also make a classic spice blend (and take a jar of it home). Plus, we’ll share some extra, spiced goodies to try during class. Curio Spice Co. is on a mission to inspire culinary creativity and to help people engage with farmers and the amazing natural world. Join us and get inspired!

 

Claire Cheney founded Curio Spice Co. in 2015 to source spices directly from farmers and share their stories through her unique blends. She's worked in the specialty food and restaurant industry for the last decade and has spent years hunting spices, most recently traveling to Ethiopia, Costa Rica and Madagascar (pre-pandemic!). Curio Spice Co. has been featured in Saveur, Bon Appetit, The Wall Street Journal and elsewhere. Curio features over 200 spices in their Cambridge MA shop and has an online and national presence through other retailers. Curio is a mission driven Certified Benefit Corporation.

 

Josh Mamaclay has been fascinated by flavor since he first dove into the back of the pantry at 10 years old. His passion for food brought him to Johnson & Wales University and, since then, Josh has worked in pizza joints, fine dining restaurants, a chocolate factory, and a test kitchen. Now, when he isn't tasting every spice possible or photographing everything at Curio, Josh instructs at the Milk Street Online Cooking School.
