We are excited to team-teach this class with guest, Roy Marden, grandson of the founder, and third generation fishmonger of our community’s much-loved local market, Captain Marden’s Seafood. Roy will help you learn the techniques to buy and prepare simple and delicious seafood dishes. We will discuss 1) why buy, cook and eat seafood more often, 2) what is local and abundant, by season 3) buying advice: farmed versus wild-caught, fresh versus frozen, and tips for selecting the best seafood. Living in New England gives us the distinct opportunity to source really fresh seafood, and our menu (co-written with Roy) features delicious preparations of the best fish, swimming locally and in season right now.
